Lasagna
I love lasagna and this is a perfect example of how easy switching to gluten-free can be. Just because you give up gluten doesn't mean you have to give up pasta. When I make lasagna I make extra to go in the freezer for those crazy days when you need a premade meal. Lets face it they don't make a lot of Gluten-free freezer ready made meals. Because life happens I put a lot of meals in the freezer for that purpose.
Here's what you will need:
- 2 Boxes of Oven ready Lasagna Noodles
- 2 16oz containers of cottage cheese
- 1 16 oz container of ricotta cheese
- Your favorite tomato sauce
- Mozzarella cheese
- Parmesan cheese
- 2 eggs
- Salt
- Pepper
- Oregano
- Basil
- 2lbs of lean ground beef browned and drained
Step 1:
Set oven to 375 degrees. Mix browned ground beef with tomato sauce.
Step 2:
Mix Ricotta, cottage cheese, 1/2 cup of parmesan cheese, 2 Tablespoons of Oregano, and 2 Tablespoons of Basil, Salt, and Pepper to Taste. Add Eggs after adjusting salt to the desired flavor.
Step 3:
In a greased baking dish put a small about of meat sauce down. Add a layer of noodles (You don't have to cook these which makes it even easier). Next a good layer of meat sauce, then a layer of the cheese mixture. Add noodles again and repeat the layers. Everyone's dish is different depts so you can get anywhere from 2-3 full layers.
On your last cheese layer, your will top with mozzarella cheese.
Step 4:
Bake at 375 degrees for 45 min or until hot through the center. With the remaining amount, you can build 1-2 more and put them into the freezer.
