Lasagna I love lasagna and this is a perfect example of how easy switching to gluten-free can be. Just because you give up gluten doesn't mean you have to give up pasta. When I make lasagna I make extra to go in the freezer for those crazy days when you need a premade meal. Lets face it they don't make a lot of Gluten-free freezer ready made meals. Because life happens I put a lot of meals in the freezer for that purpose.                                                                                           Here's what you will need: 2 Boxes of Oven ready Lasagna Noodles 2 16oz containers of cottage cheese 1 16 oz container of ricotta cheese Your favorite tomato sauce Mozzarella cheese Parmesan cheese 2 eggs Sal...

Chicken Parmesan with Golden Tomato Sauce This is one of my husband's favorite meals. I think one of the scariest things about going gluten-free was the fear of not being able to make those familiar favorite family foods. Whether it is yourself, your husband, or your kids you want to be able to make those foods that everyone loves and still have those familiar flavors. So today I'm going to share pictures and tell you how I made this wonderful dish. I usually use a red sauce but had found the Golden tomato sauce and wanted to try it. What you will need:                                 Boneless Skinless Chicken Breast Cut in half.(I use a pack of 5 cut in half I have ten and then have some for the freezer for a fast meal next time).  Your favorite gluten-free tomato sauce. I found mine at Sprouts. ...

My goal is to give you tips to make this change easy for you as well as menu ideas that are kid friendly.  Let me introduce myself, I'm Melissa Anderson, I have Celiac Disease and because of that it has changed my life and the lives of our family as the majority of what has to happen in our kitchen must be gluten-free. I'm learning more about this autoimmune disease everyday, but the most important thing I have learned is that once you get past the initial shock, you need to change a few things and then this is possible to do. I have an incredible husband who is so supportive and when we found out told me that we were going to do this together. We have 4 beautiful boys that love to eat and so far we have had no complaints over the food put in front of them.  So mommas, dads, grandparents, or anyone just wanting t...
