Chicken Parmesan with Golden Tomato Sauce

This is one of my husband's favorite meals. I think one of the scariest things about going gluten-free was the fear of not being able to make those familiar favorite family foods. Whether it is yourself, your husband, or your kids you want to be able to make those foods that everyone loves and still have those familiar flavors. So today I'm going to share pictures and tell you how I made this wonderful dish. I usually use a red sauce but had found the Golden tomato sauce and wanted to try it. It was very good and would recommend using it anytime you want a tomato sauce that is different.



What you will need:                               
  • Boneless Skinless Chicken Breast Cut in half.(I use a pack of 5 cut in half I have ten and then have some for the freezer for a fast meal next time). 
  • Your favorite gluten-free tomato sauce. I found mine at Sprouts. 
  • Gluten-free pasta, I used penne but any pasta including spaghetti noodles can be used. 
  • 1 1/2 cups Gluten-free Bread Crumbs
  • Olive Oil
  • 1 cup Parmesan Cheese
  • Mozzarella Cheese
  • 2 Tablespoons Oregano
  • 1 Tablespoon minced Garlic
  • Salt and Pepper to taste
  • 1 1/2 cup All purpose gluten-free flour
  • 2 eggs
  • 1/2 cup milk
Set oven to 350 degrees

       
Step 1: Slice chicken in half then pound out until about the same thickness for the whole piece. This helps with consistent cooking and speeds up the cooking time.


Step 2: Mix bread crumbs, oregano, salt, pepper and parmesan cheese in a pan. Set up breading station. First pan is flour, second eggs mixed with milk, last bread crumb mixture.
Bread chicken in order of flour, eggs, and bread crumbs.


Step 3: Drizzle olive oil in pan and fry the breaded chicken on each side for a total of 4-6 min until golden brown. 
Step 4: Prepare your gluten-free pasta according to package
Step 5: I have a large skillet that I bread the chicken in then wipe out and then use for the sauce and oven. Add olive oil to skillet and minced garlic. Cook slightly then add sauce. (If you want to move to a casserole dish now is the time to pour the sauce in that pan.) If you are using the same skillet add your chicken back into the sauce using a spoon to ladle some on top of the pieces. Sprinkle mozzarella cheese on top of each piece, not the whole pan. Put in oven for 15-20 min until the cheese is melted and bubbly.


Step 6: Let chicken set for about 3 min. Serve over pasta with your choice of vegetables or salad.
Step 7: Any extra Chicken you didn't need can be stored in a freezer bag and popped out for a fast meal next time.
